Zucchini Chocolate Cake

3 C. flour
1/2 C. unsweetened cocoa powder
2 tsp. baking soda
1 tsp. salt
3 c. white sugar
1 1/2 c. canola oil
3 eggs
3 cups grated zucchini
1 tsp. vanilla
1 cup buttermilk
1 - 8 oz cream cheese
1/4 c sugar
1 egg
1 cup chocolate chips

Preheat over to 350 degrees

Beat 3 c. sugar with oil. Add eggs one at a time and beat. Beat in zucchini and vanilla - Beat flour mixture into sugar mixture by 1/4's alternating with 1/4 cup buttermilk. Mix 1 min. - Pour into jelly roll pan.

Mix cream cheese, 1/4 cup sugar - Add 1 egg and mix until smooth. Spoon dollops over cake and swirl with knife.

Sprinkle with chocolate chips

Bake till done

Ice or sprinkle with confectioners sugar - your choice

Frozen Berry Margaritas

3 C. Ice
1 C. Tequila
1/2 C. Orange Juice
2/3 Cup Frozen Strawberries
2/3 Cup Frozen Blueberries
2/3 Cup Frozen Raspberries

3 T. White Sugar

Blend ice and tequila. Add berries and sugar.

Serve frosted glasses

Margaritas

1 can frozen lime juice
fill can with tequila
"Pour" of triple sec
fill to top w/ice

Blend - serve in frosted glasses

Zucchini Bread

3 Cups of flour
1 Tsp. salt
1/2 Tsp. baking powder
1 Tsp. baking soda
1 1/2 Tsp. cinnamon
1 Tsp. nutmeg
3 eggs
1 1/2 cup sugar
1 cup shortening
2 cups grated zucchini
1 cup chopped nuts

Cream sugar and shortening. Mix rest of ingredients together until smooth, add nuts.

Bake 325 degrees for 1 hour

Nancy's Decorating Icing

1 C. Crisco
2 Egg Whites
1/2 Tsp Salt

1 lb. Powdered Sugar
2 T. Cornstarch

Add 1 Tsp flavoring - 1/2 tsp vanilla and 1/2 tsp butter flavoring

Beat Crisco with 1/2 sugar until well blended - then add egg whites, cornstarch and rest of sugar and flavorings. Beat for 5 minutes.

Stores in refrigerator for up to 2 weeks

Bert's Cheese Cake Dip

Stick Butter
8 oz cream cheese
3 T. brown sugar
1/2 Tsp vanilla
1/2 c. confectioner sugar
1/2 c. mini chocolate chips

Cream butter and cream cheese together. Add brown sugar, vanilla. Cream all. Add 1/2 cup confectioner sugar. Add chocolate chips.

Serve with graham cracker sticks

Taco Dip

2 8 oz. cream cheese
1 16 ox container French Onion Dip

Mix Together

Brown 1 1/2 lbs ground meat - add package taco seasoning

Layer ground meat mixture in bottom on 9x13 pan, shredded cheese, salsa, lettuce, tomatoes and then cheese mixture
