2 1/2 cups shredded zucchini
1 cup seasoned bread crumbs
1 egg, lightly beaten
2 tablespoons chopped onion
1 tablespoon butter, melted
1 teaspoon prepared mustard
3/4 teaspoon seafood seasoning
1/2 cup crushed butter-flavored crackers (about 13)
2 tablespoons vegetable oil
In a bowl, combine the zucchini, bread crumbs, egg, onion, butter, mustard and seafood seasoning; mix well. Shape into five patties. Dip in cracker crumbs. Heat oil in a large skillet; fry patties for 4 minutes on each side or until golden brown. Drain on paper towels.

Broccoli Cheese Soup
Melt 1/4 cup butter
Add 2 tablespoons water
Heat to boil.
Cut up broccoli, celery, onion, grate carrots, slice mushrooms and saute
Add 2 cups milk
2 cans cream of potato soup
Heat to boil, reduce heat and add 1/1/4 cups grated cheddar cheese, 3/4 cup provolone cheese.

Jena's Pizza Dip
1 1/2 packages Cream Cheese
1/2 jar Pizza Sauce
1 bag shredded Italian Blend Cheese
Pizza toppings: Pepperoni, mushrooms, peppers, onions, etc.
Spread cream cheese evenly over a pizza pan
Spread pizza sauce on cream cheese
Sprinkle cheese on top (as much as desired)
Spread pizza toppings
Bake 450 degrees for 10 minutes or until cheese melts
Broil for a few minutes to brown the cheese, if desired

Jena's Mexican Dip
1 package of cream cheese
1/2 jar of salsa
1/2 package of Mexican blend cheese
Spread cream cheese on a platter
Spread salsa on cream cheese
Sprinkle as much cheese as desired
Variations:
- Heat the cream cheese in the microwave for 45 seconds to soften
- Mix in 1 package of taco seasoning
- Spread salsa and sprinkle with cheese
